Bucatini is the classic format for amatriciana, cacio e pepe, and carbonara, and suits the traditional Neapolitan soffritto — a bold, chilli-led preparation that calls for a pasta with structure and substance.
Cooking Time
9 minutes
Garofalo Bucatini is a long, thick pasta with a hollow channel running through its centre, made from 100% durum wheat semolina and produced in Gragnano, Italy under IGP (Protected Geographical Indication) certification. The format sits between a long and short pasta in both character and performance — it has the length of spaghetti but the hollow core more commonly associated with tubular short pasta, giving it a structure with genuine personality. That hollow centre is not merely a visual feature: it draws sauce inward as well as outward, creating a depth of flavour that a solid strand simply cannot replicate.
Bronze-die cut to combine wheat character with bold sauce compatibility. Drawn through traditional bronze dies, the exterior of each strand develops a naturally rough, porous surface that grips strong, simple condiments with ease. The combination of hollow core and textured exterior makes Bucatini particularly well matched to robust, assertive sauces — those built on fat, salt, and intensity rather than delicacy. With a 9-minute cook time and the structural resilience of Gragnano IGP durum wheat, it holds its form confidently through service and delivers a satisfying, full-bodied bite at the table.
A long pasta with the range to anchor a menu section. From the Roman classics to traditional Neapolitan soffritto — a deeply spiced, chilli-forward preparation best paired with a full-bodied red wine — Bucatini brings a distinct point of difference to any long pasta offering. Supplied by Sapori in a 24 x 500g case, it suits restaurants, catering kitchens, and wholesale accounts across Cape Town and the Western Cape seeking an IGP-certified Italian pasta with genuine character and provenance.
