Garofalo Tagliatelle Nido is a long, flat ribbon pasta made from highly selected durum wheat semolina, produced in Gragnano, Italy under IGP (Protected Geographical Indication) certification. "Nido" means nest — a reference to the way the tagliatelle is wound into individual portions before drying, a format that makes the pasta easy to handle, portion, and cook consistently. Garofalo's version is a considered reinterpretation of the classic shape: the ribbon is broader and thicker than a standard tagliatelle, giving it a more substantial presence on the plate and a rough, dense consistency that adds flavour to every dish.
Bronze-die cut for a thick, textured ribbon. Drawn through traditional bronze dies, the surface of each strand develops a naturally rough texture that holds sauce along the full length of the ribbon.
